I love to cook, and I really love to cook candies. I love to watch expressions on people’s faces when they bite into sweet and chewy confections made with care and finest ingredients that come together in such a delicious way. One of the most frequent questions I get relates to my kitchen: “What do you use to make this with?”

My kitchen is probably a lot like yours. It is modest and simple, and I have owned many of my appliances and tools for many years. So, I want to share with you the tools of my candy-making so that you can be confident in your tools. You don’t have to have the latest and greatest equipment, but you do have to have some basics.

Heavy Duty Stand Mixer

You have to have a heavy duty stand mixer, especially if you will be making divinity and other candies that require beating. I bought my wife a Kitchenaid® K45SS over 30 years ago, and it is still running as efficiently as it did on the first day. The old ones were built to last a lifetime by Hobart®, but the Kitchenaid® line was sold to Whirlpool® in the mid 1980’s. Since then, the quality has not been the same, but Kitchenaid® is still among the highest-rated stand mixer on the market. If you find an older used one at a yard sale, buy it if it has the Hobart® name on it.
